About resealing granite countertops?

The instructions on the sealer say to thoroughly clean the counter, let it dry for several hours, apply the sealer, then let that dry for several hours. Is it actually possible to re-seal countertops without moving into a motel for a couple of days? I can't imagine being in the house and not being able to use a large chunk of counter space.
